Guisante soup recipe with butter

Derret the butter in a median pot over medium heat until it is foamy.

Ingredients to make pea soup with butter:
1 tablespoon of butter without salt
1 teaspoon of newly squeezed lemon juice
1 medium leek, cut of root, cut in half longitudinally, and in fine slices
2 1/2 cups of vegetable broth or chicken broth
1 Lypoon of freshly ground black pepper
3 cups of fresh peas (can be used of dick or bag)
1/4 cup of fresh mint leaf

Ingredients to make pea soup with butter:

2. Add the leek, 1/2 teaspoon of salt and a pinch of pepper and cook, stirring occasionally, until they are soft, about 3 minutes.

3. Add the broth, add 1 1/2 teaspoons of salt and pepper, bring to a boil. Add the peas and let boil again.

4. Reduce the heat to half-low and cook over low heat until the peas are tender, about 5 minutes.

5. Remove the pot of the fire, add the mint leaves and with a food or blender processor, beat the soup to make a cream. Let rest.

6. Transfer the soup to a clean saucepan or a heat resistant container and add the lemon juice.

7. Try and season with more salt, pepper and lemon juice, as necessary. It can serve cold or hot and accompany from bread croutons.
