Escarola soup recipe with almonds

Ingredients to make escarole soup with almonds:

1. We gather all the ingredients to prepare the escarole soup with almonds.





2. In a pot, fry the almonds with 3 tablespoons of olive oil. We let them have for 2-3 minutes and take them out. For this dish, peeled almonds are usually used.





3. We cut the bread into slices and peel the garlic removing the central part so that they do not repeat. We add the garlic to the pot, let them brown for 1-2 minutes and remove. Similarly, add the bread until it is added on both sides.





4. We put the garlic, almonds and bread in a blender container, add some water and salt. We beat these three ingredients well.





5. We put water to boil and add the washed and cut escarole. We let it boil again and strain.
