Ingredients to make crab cream:
500 ml of broth
500 grams of crabs
2 French shalots or onions
100 grams of butter
500 ml of milk
1 tablespoon of flour
1 glass of white wine
1 carrot

Ingredients to make crab cream:

1. With 20 grams of butter the carrot, the chives and the parsley all finely chopped.

2. The crabs are added and when these are red the wine is added. It is put over high heat for the wine to evaporate.

3. The crabs are removed and peel. 12 crab queues are reserved. The rest of the peeled crabs pass through the crusher with the rest of the cooking.

4. The Bechamel is made sautking the flour until it takes color.

5. The milk is added until a fine bechamel sauce is achieved, and when the seafood cream is added with crabs with the rest of the butter.

6. The boiling broth is added little by little.
