2. Wash the housing well and introduce it to the oven with the onion cut into slices, 190º C until golden brown.
3. Arrange the housing and thighs on fire covered with cold water. As soon as we boil and wash them in water with ice.
4. We have them back on fire, covered with cold water. Add toasted onion slices to the water and a handful of salt.
5. Make a garnà bouquet with the target of the leek, the carrot, laurel and thyme. Add to the consommé and let a gently boil 1 hour.
