1 eggplant
½ leek (without leaves)
1 tomato
1 carrot
1 cheese (optional)
1 pinch of salt
1 pinch of chopped parsley
2 tablespoons of olive oil
agua (necessary quantity)

Ingredients to make eggplant puree with Thermomix:

1. Before starting to prepare the eggplant puree with Thermomix we leave all the ingredients ready. To do this, we peel the carrot and chop it, peel and also cut the eggplant in dice and the leek into medium pieces. Finally, we peel the tomato and remove the stem.
