2. We season the scholarship with salt, pepper and nutmeg and sprink them with thyme.
3. We introduce the hot source in the oven, preheated at 220 ºC, for 15 minutes.
4. Once the scholarships have been roasted, we take out the source from the oven and chop them; We separate the thighs and legs, and reserve them to heat in a casserole.
5. Troce the bodies that we have taken from the scholarships (the bones of the breast and other remains) and again we put in the oven fountain together with the crushed heart.
6. Add the white wine, put the fountain to the fire, and remove the set with a wooden spatula.
7. Let it boil very gently for 10 minutes.
8. We put the salt point and strain this sauce.
9. With this sauce, we save the thighs and breasts we had reserved.
10. We heat so that they boil for another 3 minutes and serve.
11. We accompany some mushrooms with fried onion.
