Flour turkey thighs and pass through a low casserole with 4 tablespoons of oil. We remove them from heat and reserve them to follow their cooking.

2. Next, we chop the onion and garlic in Brounoisse (small minced) and brown them slightly in the same casserole, with the remaining oil, over moderate heat.
3. We put the turkey thighs again in the casserole, wet with the wine and cover the casserole so that the turkey thighs are cooking softly. So that the wine evaporates almost completely. We add to the casserole the olives ( half of them chopped and the other half whole) and we continue cooking with the lid and on moderate heat for 30 more minutes.
4. Add a splash of water or bird broth if the thighs dry too much. We serve the thighs with the olive sauce and the olives themselves such as garrison and fried potatoes.
