Toledos quail recipe

We clean the quail well.

Ingredients to make to Toledo:
For 4 people ::
8 quail.
300 g of fine cut onions. cl of oil.

2. Brid with bramante (strong thread).

3. We sauté the quail in a pan with the oil and when golden are removed to a casserole.

4. We sauté the onions with the other ingredients (the carrots are put into slices) and when it is well sautéed everything we incorporate the white wine and put to cook together with the quail over low heat covering the container.

5. Once cooked (1 or 2 hours), remove the quail and reduce the sauce until it is concentrated and get ready.

6. We serve in mud casserole with teaspoon potatoes (fried potato balls).
