First, we salt and pepper the entire duck and we have roasted it in a clay casserole with olive oil and a little butter.

2. Once golden we add the martini, the liquor, the cinnamon branch, the orange, the apple (cut into pieces and without skin).
3. We will add some water and cover the casserole letting cook for an hour and a half.
4. While the duck is roasting, we take the opportunity to fry the pinions with a little butter.
5. When the duck is about, we cut it to the rooms and put it again in the casserole with the pine nuts and plums.
6. We will leave 10 min. to the fire and we can serve the duck accompanied by apple, orange, pine nuts and plums, and covered with a little sauce.
