Rabbit recipe to Siciliana

Make a marinade with the bay leaf, wine, parsley and the pepper grains that will be allowed to boil slowly.

1 tender rabbit
50 gr of bacons
olive oil
white wine
2 laurel leaves tablespoons of vinegar
1 tablespoon of sugar
flour
broth

2. Clean and split the rabbit into pieces, put it in a saucepan and pour the marinade on it.

3. Leave in maceration for two hours.

4. Sauté the onion and the celered celered fine in oil, add the olives without bone and cut into pieces and the capers and then the tomato sauce, the vinegar and the sugar.

5. Bathe with a bucket of water, mix and let cook until the vegetables are tender.

6. Remove the rabbit from the marinade, drain it well, flour it and saute them in the same oil where the chopped bacon will have been fried.

7. When the rabbit has grasged evenly, bathe it with a little broth and let it cook, with the covered container.

8. Once cooked, remove the rabbit and reduce the sauce.

9. As you present: put the rabbit in a fountain, mix the rabbit sauce with vegetable sauce, add pepper grains and pour over the rabbit.

10. Let cool and serve.
