PARFAIT OF FOIE GRAS PARFAIT WITH GREEN PEPPER

Once the piece of Oca Foie is cleaned, macerate in an adequate container with all the ingredients indicated except for the entire peaches that we will reserve for the decoration.

Ingredients to make foie gras parfait with green pepper:
400 gr. of foie (liver) of oca
10 gr. from salt
5 gr. of sugar
10 gr. of green pepper
freshly ground pepper
300 gr. White peach peeled

2. Keep the set in the refrigerator for twelve hours. Then take it out and dispose of a cloth and perform the operation of cylinder shape to the Parfeit, letting it cool again to be able to cut it, once cold, in medallions, serve very cold accompanied by a salad of green beans and the rest of the peach peach sauteed.

3. Note: Foie Gras has to be as cool as possible. The pepper can be bleached in boiling water and its flavor is much softer.

4. It can be accompanied with a roasted brioche and it is also very good for the soft flavor of the foie gras to accompany the dish with a glass of semi-sweet wine.
