OCA Rillettes Recipe

Cook all ingredients in a mud casserole over low heat for 8 hours. Strain and reserve the fat of the meat. Crush the meat with a fork removing the bones.

Ingredients to make Oca rillettes:
750 gr. of chopped oca
500 gr. of pork bacon in dados
20 cl. OF WATER
1 BRINK OF HERBS
salt
pep

2. Put the meat in terrines or bottles, and cover it completely with the reserved fat. Once the rilette is cold, cover with sulphurized paper.

3. In a fresh site it is preserved between one and two months, but it must be consumed before a week, once the fat protective layer is broken.
