Gallina Cus-Cus recipe

Mix the eggs, the water and the saffron adding broth cool on a little semolina on a large tray (tafsim) and twist little by little. Then they pass through a thick sieve to get the grains, then pass through a finer strainer (to get the thinnest) and that there is a medium uniform grain.

500gr of semolina
4 eggs
1 1/4 cups of water
1 boiled chicken and 1 piece of boiled chest
liter of chicken broth and fat chest of beef
100 gr. from chickpeas
saffron
