Fresh duck liver recipe with coffee jam

We add sugar and brandy to coffee, dissolve well and, hot, incorporate the teaspoon of previously dissolved in a little water.

Ingredients to make fresh duck liver with coffee jam:
20 gr sugar
brandy a few drops
1 tablespoon agar -agar
liver of fresh duck
salt Maldon

2. We save the jam in a bowl and let it cool.

3. We cut a thick duck liver scallop and pass it through the pan, taking care of leaving the heart at its point.

4. We have some teaspoons with the coffee jam at the bottom and the duck liver on top, to end up seasoning with Maldon salt.
