French chicken gizzard recipe

Ingredients to make chicken mollets:

1. Prepare all the ingredients to make chicken mollets. Although they sell them clean, always remember to wash them at home.





2. Put the gizzards in a bowl with water under the tap and clean them well removing the skin, fat and blood.





3. Once they are clean, put them in another bowl with a little water and vinegar, let them soak 15 minutes. After this time, wash them and drain them well. Take a casserole with water and salt and, when it starts boiling, add the chicken gizzards and let them cook about 40 minutes. If you want them to have more flavor, you can add some vegetables such as onion, leek, pepper or carrot, as well as herbs such as laurel. When they are ready, take them out and drain them.





4. Once cooked, reserve them. Pick the garlic in small pieces next to the parsley.





5. Put a pan with a good stream of oil, room and add some pepper. Cut the chicken gizzards into small pieces and add them to the pan. I skip them to brown on all sides and keep them over medium heat for 10 minutes or until they are a bit golden.





6. Add a glass of white wine, let alcohol evaporate and let cook for 5 more minutes.





7. Add the garlic and chopped parsley, go stirring to mix everything well and so that chicken gizzards are taking the flavor of garlic. Be careful that garlic does not burn. When it is, take out and serve your hot chicken gizzards. If you like the spicy, you can add a chilli or a cayenne along with the garlic and the parsley.
