Deer medallions recipe with a steer marrow

Rub the medallions with a cloth and tie them around giving them shape. Machar the spices and mix them with the cherry liquor. Rub the meat with the mixture and let it stand covered 1 hour.

Ingredients to make deer medallions with a steer wipe:
8 Deer medallions
8 juniper berries
8 black pepper grains
4 cl. Cherry liquor (kirsch)
100 gr. of black grapes
salt
100 gr. of novillo marrow
3/8 liter of hunting background
1/8 liter of strong red wine
150 gr. of canned
2 or 3 tablespoons of fresh cream
sauce worcester
kitchen thread
for sauce
1/2 liter
500 gr. of bones cuts and setbacks of hunting
5 cl of oil
200 gr. of mature tomatoes
100 gr. of carrots
80 gr. of onions
20 gr. of gray shalots
10 gr. from garlic
tomillo
laurel

Ingredients to make deer medallions with a steer wipe:

2. scald the grapes, peel them and remove the nuggets. Heat the butter and fry the medallions 4 minutes on each side. Salat them and keep them covered in a hot place. Spray the marrow with boiling water and let stand 3 minutes. Dry them carefully and cut them into 8 slices.

4. Arrange the medallions in a refractory source and put on each one a linchita of marrow. Put the grill 2 or 3 minutes and serve them the sauce. They can be accompanied with rice, sauteed mushrooms, glazed onions and cherry or cocktail tomatoes.

7. Tomatoes can be replaced by a tablespoon of tomato concentrate. For the bottom to be linked, add 50 gr. of flour before vegetables. Remove well.
