We heat the oven to 200ºC. We spread the duck with oil and season it internally. Bake the duck for 40 minutes regularly giving it to its own juices. We peel an orange, we cut the skin in julienne (fine strips), squeeze orange and half lemon.

2. In a casserole we prepare a caramel with the sugar and a few drops of water. We remove the caramel from the fire and throw the balsamic vinegar with the caution of covering the casserole to avoid splashing. We return the casserole to the living fire, adding the meat broth (the meat broth can be made with leather remains and duck borders) and the orange skin. Cook and let reduce over low heat.
3. We peel the remaining orange and grapefruit and separate the segments. We take out the oven duck and chop it, remove the liquid fat from the oven source and break down the juices that have been hit in the oven source with the lemon and orange juice. We pour this mixture into the sauce, we lead to boiling, add the orange and grapefruit segments.
4. We stop the cooking of the sauce, we put the salt and sack the chopped duck, we serve accompanied by the citrus and salsa segments.
