Chicken recipe with eggplant sauce

Ingredients for chicken with eggplant sauce:
1 kilo of clean and chopped chicken
2 eggnas
300 grams of onions

Ingredients for chicken with eggplant sauce:

4. We peel and chop in Brounoisse (fine minced) the onion and garlic.

5. Brong the chicken pieces in a pan with oil and reserve them.

6. We remove almost all the oil and in that pan, we fry the onions. When they are a little soft, add the garlic, the eggplant, the salt, the pepper and a saffron pinch.

7. Add 1/2 liter of water and cook the vegetable until the sauce reduces.

8. We preheat the oven to 180ºC and in a baking source we have chicken for 40 minutes.

9. We pass the eggplant sauce through a blender and then through the Chinese strainer and accompany the roast chicken with this eggplant sauce.
