Vegetarian fideuá recipe

Vegetarian fideuá is a very complete and nutritious dish. Its preparation is very similar to that of the paella, but the thick noodles are used in the rice place. Traditionally, the fideuá is prepared with seafood and fish, but in this recipe we will only use varied vegetables and chickpeas to give a protein contribution to the plate. This vegan fideuá is a perfect dish to enjoy it as a family or a large company, so I share it with recipes.

Ingredients to make vegetarian fideuá:
1½ cups of noodles for fideuá
1 cup of cooked chickpeas
100 grams of soy vegetable meat in strips
3 cloves of garlic
1 onion
1 carrot
¼ cup of peas
½ cup of frozen frozen artichokes
½ cup broccoli
½ cup of green beans
2 tomatoes
1 teaspoon of turmeric
2 laurel leaves
½ teaspoon of salt
2 tablespoons of vegetable oil
1 piece of ginger
1 liter of vegetable broth
1 pinch of saffron

Ingredients to make vegetarian fideuá:

1. Before starting to cook this vegetarian fideuá, chop the onion, garlic and ginger. We also cut the diced tomatoes and the carrot into slices.

2. We heat the oil in a paellera or a Honda pan. Sauté the onion until it begins to get transparent. We add the garlic and ginger, fry a minute and add the tomatoes. We continue cooking several more minutes until the vegan fideuás sauce is ready.

3. Next, we incorporate into the pan the rest of the vegetable, except the broccoli. We cook the vegetables about 5 minutes stirring occasionally.

4. We pour the vegetable broth into the paellera, add the bay leaf, salt and turmeric, stir well and carry the broth to boiling.

5. When the broth boils we lower the heat halfway and incorporate the noodles, the chickpeas, the broccoli and the soy meat strips (previously defrosted). We cook the vegetable fideuá 10 minutes over moderate heat, turn it off, cover the pan with aluminum foil and let stand 20 more minutes.
