Ingredients to make vegetable fideuá:
300 grams of angel hair noodles

1 eggplant unit

Ingredients to make vegetable fideuá:

2. Peel the onions and cut them finely. Do the same with pepper and garlic.





3. Wash the eggplant and zucchini and cut them into small pieces as seen in the photograph.





4. In a pan heat a little olive oil and sauté the onion, pepper and garlic.

7. Incorporate it into the previous fideuá, season with paprika and let cook for a few more minutes.





8. Add the water or vegetable broth and let it boil.





9. Add the noodles by breaking them a little with their hands. Let it boil, lower the heat halfway, cover and let cook for approximately 5 minutes, or until the noodes are at the dente.
