Fideuá is a dish that is made in the way very similar to paella, but its main ingredient are noodles. Traditionally the fish, fish and seafood broth is used as other of its ingredients, but I have prepared this vegan fideuá recipe with a lot of vegetable and the vegetable broth that provide all the flavor to the plate. I have also added vegetable meat that simulates the fish and whose recipe you can find in my recipe profiles, but you can add seitan or tofu if you prefer.

Ingredients to make vegan fideuá: |
400 grams of fideuá noodles 1½ liters of vegetable broth 1 onion 2 artichokes 1 pepper ½ cup of peas ½ CalabacÃn ½ orenjena 2 carrie 1 teaspoon of turmeric 150 grams of vegetable meat, seitan or tofu 2 tablespoons of olive oil 1 teaspoon of salt |

Ingredients to make vegan fideuá:
1. In a large paellera or pan heat the oil and sauté the onion and chopped garlic until the onion begins to get transparent.
2. incorporates the carrot and pepper cut into small pieces and the artichoke cut into rooms. The vegetable cooks from time to time for a few minutes and incorporates the peas, the eggplant and the zucchini cut into small pieces, remove and cook several more minutes.
3. Then add the diced tomatoes and vegetable meat or seitan and cook one more minute.
4. Add the noodles to the paellera or pan and jump them for 2 minutes stirring. Add the vegetable broth and spices, cover the pan and cook the vegetarian fideuá another 10 minutes.
5. Turn off the heat and leave the vegetable fideuá rest with the lid on for 20 minutes. Sprinkle a little paprika above and serve the newly made vegan
