Ravioles recipe with escarole

Clean your brains by immersing them in hot water and peeling them.

Ingredients to make ravioli with escarole:
For 4 people ::
400 gr. of flour (and something else to flour)
3 eggs
salt
Fill ::
1 escarole
100 gr. of Sesos de Ternera
100 gr. from sausages
butter
250 gr. of cooked or roasted cow meat
3 eggs
grated cheese
nutzada
salt

Ingredients to make ravioli with escarole:

2. Peel the sausages.

3. Say in a casserole 40 gr. of butter, add the brains and the shredded sausage and cook them 5 minutes, stirring and seasoning it.

4. Wash and cook the escarola, clean and bled for 15 minutes.

5. Drain it with a sparkling.

6. Chop it and saute it with a piece of butter for a few minutes.

7. Chop the meat and gather in a bowl all prepared ingredients.

8. Add the eggs, a little salt and grated nutmeg.

9. Mix it well stirring and add 4 tablespoons of grated cheese.

10. Remove again and let it stand 30 minutes.

11. With the indicated ingredients, prepare the dough and then stretch it with a roller until you get a very fine plate.

12. Place about half of the paste at uniform distance, filling piles and cover it with the other half of the pasta, marking the contours with a cutting wheel.

13. With the tips of the fingers, press around each filling pile to paste paste edges well.

14. Cook them in boiling water.

15. Condition them with quite a molten butter aromatized with sage and grated cheese.
