Ingredients to make paste stuffed to pesto:
1. The first thing we are going to do to start preparing the recipe is to make homemade paste. If you prefer, you can buy the stuffed pasta already made and go directly to the step where we make the pesto sauce.
2. To make the dough of the stuffed pasta, we sift the flour, make a hole in the center, place an egg, the oil and start to mix. When we have the integrated egg, add the next, and so on to end all the eggs. We are adding water to better incorporate the ingredients.
Trick: You can use sunflower or olive oil.
3. When we have a compact mass, which does not stick in the hands, cover it with film paper and reserve it at room temperature to rest for approximately 30 minutes. If you can leave it for an hour, better.
4. While the dough of the stuffed paste rests, we can prepare the spinach and ricotta filling. We have chosen these ingredients, but you can also make a mushroom -based filling, for example.
5. To make the pasta filling, place the cheese with spinach in the blender vessel and crush these ingredients well. Then, we pass the mixture to a bowl and add salt, pepper and garlic powder.
Trick: If you want to give it an extra touch of flavor, add nutmeg.
6. When the dough has rested enough time, we remove the film and extend it with the help of a roller. Then, we cut equal circles, about 5-6 cm in diameter. If you prefer, you can make the smaller stuffed paste.
7. We place a little filling in one of the halves of each circle of pasta, we close to form a crescent and seal the edges with the tips of a fork. In this way, the stuffed pasta will be with a similar form to that of an empanada. Then, we boil the pasta in a pot with hot water, a little olive oil and salt. Fresh paste cooks very fast, so you should be attentive.
8. When the homemade stuffed pasta is ready, we drain it, we pass it through cold water to cut the cooking and reserve it while we do the pesto sauce. For the sauce, all we must do is liquefy all the ingredients.
Trick: If you have plenty of pesto sauce, guide it for other recipes in the refrigerator.
9. We take a large and deep pan, put the sauce to heat and, when hot, add the stuffed paste and mix well. This step should not last long, since we want it is to mix the paste with the sauce, nothing more. We serve the paste stuffed to the pesto accompanied by a green salad and voila. Bon Appetite!
