1. To make the mass recipe for homemade sorrentinos first brings together all the ingredients you are going to use to make the mass of sorrentinos.
2. Then, we put the flour in a bowl and make a hole in the center.
3. Cascamos the eggs and put them together with the flour, incorporate the salt and, little by little, we are putting water little by little and mixing. The ml of water indicated are orientative, since you have to add the amount that requires the flour.
4. With the help of a spoon, we continue mixing and incorporating the water until it takes the necessary consistency and then kneaded. The amount of water must be the necessary to get a mass of homogeneous sorrentinos, but if you pass and look very liquid, you can always correct it by adding more flour.
5. We put on the table a little flour, we put our dough for sorrentinos and knead until we get a bun that does not stick to us in our hands.
6. Once we have the bun, we let it rest 20 minutes. Then, we will cut it into portions and start stretching the dough for the pasta.
7. Then, the portions crush them a little with the hand, almost making a rectangle.
8. With a pasta machine, we begin to gradually stretch the dough. We start with the number that kneads thicker and pass the dough twice. Then, we pass it through the next number to make it thinner, also twice. We continue like this until we reach the number that makes the dough with about half a centimeter thick. If you prefer it finer, you can stretch it more.
Trick: If you don have a pasta machine, you can use a kitchen roller.
9. Once stretched, sprinkle the flour on the dough and leave it on the table. We continue with another portion and perform the same procedure. We will do so until the whole mass of homemade sorrentinos is completed. The dough will be ready!
