I had never cooked with fresh paste before. The difference, during the process, is not great except in cooking time but it shows in the final result. I loved this new experience with this fresh paste dish with mushroom sauce, and my brother was recently in Italy and brought me a huge bag of tonnarelli (or fat spaghetti) frescoes to try them. I wanted to take advantage of them well and not make any recipe and prepared a mushroom sauce for paste without cream to accompany them. Tarelli or other fresh long paste 1 bag of dehydrated mushrooms 1 clove of garlic 3 tablespoons of Parmesan cheese 2 glasses of milk (not very large) 1 pinch of salt 1 pinch of ground black pepper 1 pinca of parsley 3 tablespoons of olive oil |

Ingredients to make fresh pasta with mushroom sauce:
1. We are going to prepare the mushroom sauce for pasta if cream. To do this, we soak the mushrooms for about 5-10 minutes, or the time indicated in the bag. When they are ready, we drain them very well.
Trick: You can also make the fresh pasta are mushroom sauce only.
2. Next, we put a little oil in a pan and brown the chopped garlic.
3. Add the mushrooms, well drained, and sauté. Let us do a few minutes. Then add the cheese and then the milk. We can add a little pepper and parsley if we feel like it. We let the boletus sauce for pasta for about ten minutes, until part of the liquid is consumed.
4. Let stand a little and when it is not too hot, we crush the mushroom sauce for pasta with the blender. As you can see, I have not added salt because the mushrooms are already quite tasty and the cheese too. You can try at this point and correct to taste.
5. Now lets cook the pasta. Being fresh, you need less time. Like half, or a little more. It is best to look. I had it about 5-6 minutes. When ready, we cast it and pass through the cold water jet. We serve it on a plate and add the sauce on top.
