Fideuá recipe with sepia and vegetables

Fideuá is one of the most popular dishes of Spanish gastronomy, even one of the most identifying symbols of some regions of this country. Its elaboration process is very similar to the one followed for the preparation of the traditional paella, changing the rice for short noodles. There are many variants that we can find of this dish so appreciated, ranging from the typical seafood fideuá to the fideuá of vegetables or meat. Ingredients to make fideuá with sepia and vegetables:
400 grams of medium noodles
1 sepia
½ onion
1 piece of leek
½ green pepper
1 piece of red pepper
1 tomato
fish broth (necessary amount)
1 pinch of salt

Ingredients to make fideuá with sepia and vegetables:

1. The first thing we must do to get to work with the recipe for vegetable fideuá is to let all the ingredients ready. To do this, we wash all vegetables and chopped to our liking, except tomato. We have chosen to cut them into very small pieces. On the other hand, we clean the sepia and chop it into cubes.





2. We put a pan with oil to heat over high heat and, once it is hot, we lower the temperature to fry the vegetables over medium heat. We add them all at once, except the tomato that we will reserve for later. Add salt to taste.





3. When vegetables are well cooked, we incorporate the sepia pieces and saute them keeping the temperature of the fire. Although we have selected these ingredients for vegetable and sepia fideuá, you can add or eliminate the vegetables you want.





4. Once the sepia is tender, we add the crushed tomato, stir well, pour the fish broth and let it cook for a few minutes over low heat. At this point, we can add salt to taste, but be careful with the amount to prevent sepia fideuá from staying too salty.





5. In a separate pan, we put oil to heat and, once hot, saute the noodles until golden brown. Look at the image to know how they should look.





6. When they are golden, we add the sauce with the broth to the noodles and let the vegetable fideuá simmer until the pasta is to the dente. If you consider it necessary, you can add a little more broth, the ideal is that all the ingredients are well covered.





7. When ready, we remove it from the heat and cover the pan with newspaper to finish absorbing the broth and the noodles are up. This step is optional, but the homemade fideuá is characterized by presenting the pan or paellera with all the tip noodles.

8. And we can already serve the fideuá with sepias and vegetables immediately!
