Ingredients to make chicken fideuá: |

Ingredients to make chicken fideuá:
1. Short in medium pieces the chicken breast and sauté it in a hot oil stream. Add salt to taste and see the meat moving so that it is golden brown everywhere. When golden brown, retir it and reserve it.
2. With the same oil of frying the pieces of breast, also saute the pepper, onion and garlic. Cook these ingredients over medium heat and from time to time for approximately 5 minutes.
3. Pour the wine and let alcohol evaporate. Then, incorporate the tomato and mix. At this point you can put a salt pinch, the idea is to distribute small amounts of salt so that the chicken and vegetable fideuá is not soda, but not salty either.
4. Add the chicken pieces new, remove the stir-fry so that the ingredients are integrated and 3 minutes are cooked.
Trick: There are also those who prefer to mix meat and fish, preparing for example a chicken and shrimp fideuá, so you can add the ingredients you want.
5. Pour the water or chicken broth and let the sofrito continue to cook. When it starts boiling, the fire goes down.
6. Add pepper and turmeric. We use the turmeric mainly to provide a touch of color to chicken fideuá, but it should be noted that the original recipe uses saffron for it.
7. When it has been boiling 4 minutes, add the noodles and remove. If necessary, rectify with salt. Let it boil until the broth is consumed and the pasta is cooked. If the fideuá needs a little more broth, add it without problem. Likewise, if you are looking to get a broth chicken fideuá, the amount of broth or water increases.

8. In our case, the chicken and vegetable fideuá took about 10 minutes to be ready. When the paste is at its point, turn off the fire, cover the preparation with aluminum foil or newspaper and let it rest for 5 minutes.
