Ingredients to make the casserole with sepia:
1. We start by peeling and chopping garlic and onion. Cut everything finely as seen in the photo, the quantity depends on the size of the vegetables but with an onion and 3 garlic cloves should be sufficient. Safe, also finely chop the pepper and roll the tomato.
2. Now we proceed to prepare chicken and seafood. Then, wash the prawns very well and discard the heads. Do the same with sepia and chicken, cutting in medium pieces, more or less bite.
3. Heat a splash of olive oil in a pan large enough to make the casserole noodles and make a base stir with garlic, onion and peppers.
4. After a few minutes, when the onion begins to poach, it incorporates the grated tomato and removes well so that the flavors are integrated.
5. Then add the chicken and seafood. Remove everything to bathe them with the sauce. You will see that as time passes, they are releasing their juice, increasing the amount of broth of the preparation.
6. When you see that everything is disliked will be time to add the peas. See carefully and season the broth for the casserole with salt, seasoning and laurel. You can use AVECREAM type concentrated broth or any seasoning you normally use.
7. When everything is almost ready it will be time to add the noodles. These are made very fast, so do not forget to check that sepia is already made. The amount of noodles depends on the number of guests, remember to throw more or less according to your tastes.
8. Check that the casserole noodles are made over medium low heat and that there is enough broth in the pot. If necessary you can always add more water or chicken broth.
