The cannelloni can be prepared with a light dough, cut it after very fine stretch, in squares of more or less 10 cm. sideways, then cooking them in abudent boiling water with salt and only then fill them and season them.

2. If the very fine dough (crepes) will be stretched, they can be filled without previously cooking the squares.
3. melt the butter in a small pot, incorporate the flour and mix.
4. Add all the milk or broth and cook over moderate heat, continually stirring with a wire whisk.
5. Stop boiling 2 to 3 minutes.
6. brown the chopped onion in the butter.
7. Add the meat very well chopped and saute it over high heat.
8. Add chopped chard and mix.
9. Remove from heat, and incorporate cheese, salt, pepper, nutmeg and egg.
10. Fill the cannelloni with this preparation.
11. Cover them with a white sauce, or if they prefer tomato, and introduce into a regular oven at a temperature of 180 ºC, from 15 to 20 minutes.
