The fideuá is a classic dish of Spanish gastronomy, it looks a bit like a paella but instead of using rice roasted thin noodles, an exquisite creation. On this occasion we will show you how to cook a fiduá of baked seafood, a slightly laborious but simple dish that is well worth the effort.

Ingredients to make baked seafood fideuá:
1. The first step to make our authentic fideuá will be to chop the vegetables finely. Cut the onion, garlic and peppers to make our base stir. The tomato must be grated.
2. To make the base sofrito, heat a pan wide enough with a stream of olive oil. Start incorporating onion and garlic, then add the pepper and when the vegetables are well poached, add the grated tomato.
3. Hot oil in another pan and saute the noodles to brown them.
4. Seafood fideaúa is made with fine noodles and the secret to get a plate according to the traditional recipe, is to toast them before cooking. The noodles should be seen as shown in the photo.
5. When the sauce is ready, pass it for the blender to crush it completely. Pour this into a pot along with the fish broth and the strands of saffron. Heat this mixture until it boils.
6. Once the broth begins to boil will be ready to cook our baked fodeuá.
7. Next, place the seafood on a deep baking sheet, special for this type of cooking. It incorporates some peeled prawns, chirlas, sepia and squid cut into dice. Add the broth along with roasted noodles and cook at average temperature of 160-180ºC. until the broth is consumed.
8. Once the entire broth has been consumed and the noodle is al dente â€, remove the tray from the oven and place the cooked mussels and the prawns. Let stand about 5 minutes.
