Zalbadia Mondejus recipe

Perejil, leeks and sebum are chopped and placed in a container. S add the eggs, chilli and salt and knead everything well.

Ingredients to make mondejus of Zalbadia:
12 leeks

300 gr. of sheeps kidney tallow
1 tablespoon of chopped parsley
1 leg of veal
3 cinnamon pellizcos

Ingredients to make mondejus of Zalbadia:

2. putting it in a veal intestine (or very clean sheep stomach). Be careful not to fill the intestine too much, because it can be burst.

3. A veal leg is cooked, adding two leeks and a parsley branch. Once the leg is cooked, the broth is removed and tempered. Then the mondejus are thrown and they are slowly stated.

4. When you have begun to boil gently, the Mondejus are punctured with a needle, several times in intervals of 10 minutes. Total cooking time 20 minutes.

5. The broth and fat sneak in and add some bread soups, until the entire broth is soaked and absorbed by making them boil for a while.

6. They are served, both soups and very hot mondejus.
