In a casserole we fry and brown the meat cut into regular pieces, of little in little.

Ingredients to make sheep boiler: |
For 4 people :: 1 kilo of sheep or pastenco lamb. ½ liter of olive oil 0´4º. 100 grams of onion. 100 grams of carrots. 1 green pepper. 1 tomatoes. 2 teeth of garlic. ground pepper. oregano. a pinch of paprika. a pinch of thyme. a bay leaf. salt. |
Ingredients to make sheep boiler:
2. As they are brown, we take out the meat to another casserole.
3. Once the meat is brown we remove part of the fat that has the casserole where we have saute it and in that same casserole we brown the onion, the green pepper, the carrot and the garlic cut in brunoisse (fine minced).
4. We season the vegetable and we add the pepper, oregano, thyme and bay laurel.
5. Once all refrito add to the sauteed meat that we had reserved, the paprika and the tomato.
6. We cover water and let cook approximately 2 hours.
7. At the end of cooking you can add mushrooms, pods, peas or potatoes.
