2. In a mortar, crush garlic cloves with parsley and add the vinegar and oil, mix it and throw it over the round.
3. Put in the oven at 180º from 20 to 30 minutes.
4. Peel the potatoes, cut them into segments and put them to cook with water and salt.
5. When they are soft, drain them and pass them through the papuré and add the yolks, the virgin oil the pepper and the butter nut.
6. If it is very thick we can add some water from the potatoes.
7. Cut the round in slices and serve with puree.
