Ingredients to make beef ribs:
1. Cook in water with half a kilo of white potatoes and reserve them when they are ready. Apart, we moisten all ribs in oil, we season with salt and pepper to taste, a little oregano, cumin, peeled and well chopped garlic cloves, and let stand for 15 minutes to permeate the aromas.
2. Meanwhile, we can wash the vegetables to disinfect them. We cut the carrot into slices, season with salt and fry it for two minutes, reserve. Then, we cut the slices too and do the same, fry them in light olive oil over medium high heat. While the leek is fried, we add the tablespoons of brown sugar and continue cooking for 10 more minutes.
3. Once the leeks, we take them out of the pan to remove excess fat, we reserve. In the same pan, without discarding the oil and adding a little more, fry the beef ribs. It is important not to discard the oil where we fry the vegetables to get the ribs to permeate these flavors. We will fry them at high temperature to seal them, that is, they are cooked on the outside and are juicy inside. We advise you to cook the ribs little in little, if you add many pieces the heat of the oil will decrease.
4. We fry the ribs for 2 minutes per side. When they are, we remove them from the heat and boil the two liters of water in a pot. Once the boiling point reaches, we add the ribs to make the skeletal broth. While it is done, we fry the bacon in its own fat in a separate pan, until it is golden. We drain it and set it up. To the pot with the ribs we add the broth and salt cubes to taste.
5. Liquefied the bacon with half a liter of the anterior broth and add it to the pot, revolve and let cook for 30 minutes over low heat. Meanwhile, we crush the boiled potatoes until they return them. After the time, we add this mashed potatoes so that the broth acquires the consistency and texture characteristic of the stew.
6. We also add fried leeks with sugar, carrots and rectify taste with salt and pepper. We revolve and let another 30 minutes cook. After this time, we will have our stew of beef ribs ready to serve. You can accompany it with white rice and prepare a dessert of your liking.
