Ingredients to make veal fillets with sauteed vegetables:
1. The first thing we do is wash and cut vegetables. Then, in a pan, we heat two tablespoons of olive oil and saute the onion well chopped for a few minutes. We add, then, the peppers and leave it a few more minutes. We incorporate the zucchini and let it sauté everything together. Add salt to taste. When the vegetables are ready, we wash the onion, chop it, add it and let cook a few more minutes. We remove from heat.
2. We wash and cut the leek into very thin slices. Then, we saute it in another pan with two tablespoons of olive oil and, before it takes color, incorporate the mushrooms and the eggplant cut into small pieces. We cook over medium heat so that they are releasing the water, add salt to taste so that they are pointed faster. Once the sauteed is ready, add a teaspoon of garlic and stir. We incorporate a teaspoon of onion and let cook for a few minutes. Now that we have the two types of sauteed vegetables, we can get together or eat them separately.
3. Now it is the turn of the veal fillets. We make them on the grill having first passed by oil. When they are made on both sides, we add Maldon Smoked salt to give a touch to Barabacoa.
