2. The potato and hot water (two fingers above the content of the perola) is added and is cooked over low heat. The salt and the congrio are thrown to flavor.
3. Once cooked it is allowed to stand 15 minutes and, when eating it, it is irrigated with good red wine that must be drinking generously.
