1. Clean well the piece of meat and seasoning it with salt, pepper and thyme. I recommend mixing these three ingredients before and spreading the meat with your hands.
2. Heat a pan with a third of the butter and half of the oil. Once hot, place the piece of meat and seal everywhere. This means that the edges of the meat are brown without cooking at all.
