Ingredients to do pork roast:

1. The first thing we will do is prepare the wide chiles. To do this, boil in enough water and once ready, pass them for cold water to remove their skin.

2. To start with the preparation of the pig roast, the meat must be cut into cubes, cook the meat cubes in a pot with the water until it evaporates.





3. Then add the oil and brown. Meanwhile, liquefy the chiles with the vinegar, the onion, the spices (except the bay leaf) and the salt. If necessary, you can add a little of the cooking water of the chiles so that the sauce is liquefied well.

4. Pour the sauce on the golden meat and incorporate the finely chopped bay leaf. Stir well and boil.
