1 onion
2 tomatoes

2. In the pitter pot we put the pork ear, half of the onion a little thyme and bay leaf and cook until it begins to whistle; If you do not have the pitter pot it can be done in normal pot covered over high heat for an hour.





3. Once the pot we take out all the steam and open, remove the ear and reserve a little of this broth, the ear we cut it into pieces.





4. In a very hot pan and with a little olive oil we sauté the onion cut into pictures the tomato and the carrot grated for 3 minutes.
