Ingredients to make onion cake and sausages:
2. We knead to form a ball that we introduce in the fridge for 30 minutes.
3. Subsequently, we stretch the dough with the roller and place on the base of a low cake mold, which we have previously put a little butter and flour so that it does not stick.
4. We put baking paper and a weight on the cake.
5. For example, fill a bowl with rice or beans so that it has weight and does not rise the dough during baking.
6. We introduce the cake in the oven for 20 minutes at 180ºC.
7. Once baked we remove the paper and weight and prepare the quiche filling.
8. We chop the onion in julienne (fine sheets) and fry it with a little olive oil.
9. When we are golden, we put it on the baked dough along with the grooved German sausage.
10. On top of this preparation we place some pieces of Brie cheese and a very thin slicing tomato.
11. Then we make a mixture of cream, a beaten egg, nutmeg, salt and pour it over the tomato.
12. Sprinkle above a little grated cheese and bake the onion cake as a whole until the surface is browned in the oven to 200º C.
