Manchega Caldereta Recipe

Ingredients to make Manchega Caldereta:
½ leg and a chopped lamb pallet
50 g of ground almond
100 g of lamb liver
1 small onion
2 medium tomatoes
2 green peppers
2 teeth of garlic
mechego olive oil
½ liter of white wine
1 Cooked Egg
Pimecón Dulce

Ingredients to make Manchega Caldereta:

2. Troce the onions, peppers, tomatoes and fry along with the garlic in a pot with a splash of oil.

3. When ready, add the meat and once golden we incorporate the wine.

4. We let it boil over low heat.

5. In a separate pan, we fry the chopped liver.

6. Once golden, we place in a blender glass together with the almonds and the cooked egg yolk and crush until you get a homogeneous dough.

7. Once a large part of the wine in the casserole, we add two glasses of water and let it cook until the broth is reduced again.

8. We then incorporate the dough of the liver and let it boil about 5 minutes.

10. We serve very hot accompanied with the chopped chopped egg.
