Ingredients to make baked albondigas:
1. We gather all the ingredients to make the baked albondigas. We have decided to use integral bread to keep under the number of calories of this recipe, but you can use any other bread you have at home.
2. In a bowl we crumble the bread and soak it with a little milk (until covering).
3. Next we add the egg, a little salt and pepper and mix well. If you want to make this even lighter recipe you can use two egg whites instead of an egg with yolk.
4. We chop the scallion, coriander and parsley and add it to the previous mixture. We have used an onion room but if you like it, you can use a little more or even a garlic clove.
5. Finally, we add the chopped breast meat, dress with ground and ground black pepper and move well so that all ingredients are integrated well. A dense dough should be left to form the meatballs. If the dough is too liquid, you can put a little more of mold bread.
6. We form the meatballs with the help of two soup spoons. We put them on a baking sheet covered with baking paper and cook in the oven at 180 ºC for 15-18 minutes.
7. If you want you can accompany the baked albóndigas with a homemade tomato sauce. You can complete the menu with vegetarian stuffed avocados and a fresh dessert such as pineapple bavarois. Bon Appetite!
