We put on the fire a casserole that serves the oven (generally used clay casserole is used with roasts) with the oil and when it is hot we skip on it the onions and garlic, all very thin chopped.

2. When the vegetables are sauce, we add the kids legs (with cuts that subsequently facilitate their interior roast) and turn until brown, for a few minutes.
3. Next we add the saffron, the paprika, the bay leaf, the salt and the wine.
4. We remove the set, lower the intensity of the fire and leave until the sauce is reduced a little.
5. We turn on the oven and when it is at 180 ºC, we introduce the casserole and we roast for 50 minutes.
6. During this time, with a spoon, we spray the lamb with the sauce, watching that it does not reduce too much, in which case you can add some hot water.
7. A few minutes before removing the kid from the oven, we put the honey and vinegar in a saucepan and mix in the fire, stirring constantly.
8. Let the sauce reduce until it is well linked and of meloss consistency.
9. We spray the lamb with the sauce and leave in the oven about 10 more minutes.
10. We chop and accompany with fried potatoes and then finish cooking in the oven with the kids juice.
11. A lettuce and chives salad is used apart.
