Dilute the cornstarch with milk and place on the fire while stirring with a whisk, in which the boil is boiling to add the butter to pieces and season with salt, pepper and nutmeg. Remove from heat and throw in a slightly greased tray forming a ½ cm thick rectangle. When the pasta is completely cold cut some 4 x 6 cm rectangles. Gather them two by two by putting a hammering and one of cheese among them, press a little and go through beaten egg and flour. Fry in abundant very hot oil. Serve accompanied by salad.
