1. The first thing we are going to do is salt and pepper the meat and take it to the oven, approximately for 40 minutes. In my case I prefer to use entrails and does not require much cooking time because it dries, but you can use the meat pieces you want. During cooking we prepare the potatoes and the sauce.
2. For Noisette potatoes: we wash, peel and, carefully, cut them with the special spoon for these rich potatoes. Remember that they are characterized by having a small ball shape.
3. Once cut, we put them in a pot with cold water and salt and take them to the fire. When it breaks to boil, we take them out and put them to dry on a clean reviewer.
4. Finally, fry the Noisette potatoes in abundant hot oil until golden brown. We take out and place on absorbent paper to eliminate excess oil
5. Now lets go with the Salsa de Verdeo! In a pan we heat the butter and a splash of oil. We add the very small onions.
6. When they take a transparent color it is time to add the cream of milk and salt and pepper. Stir until a somewhat thick cream and let stand
7. We take out the meat from the oven, we serve it in the corresponding dishes, we bathe with the greenish sauce and accompany the Noisette potatoes. Easy, fast and delicious!
