This stuffed vegetable meat recipe is an excellent option for dinner, a family Sunday lunch or even for a more special occasion, such as a Christmas dinner. It is a little hard recipe, but it is worth it for its exquisite flavor and how colorful the plate is left on the table. We are going to prepare this folk meat based on oatmeal and wheat gluten without using any ingredient of animal origin. Ingredients to make stuffed oatmeal meat: |
1 cup of oatmeal in flakes 1½ cups of gluten of wheat 1 beet cooked ¾ cup of vegetable broth 2 tablespoons soybean sauce 1 teaspoon of cumin 1 teaspoon of garlic powder ½ teaspoon of pepper 1 tablespoon of vinegar 1 tablespoon of oil 1 yuba leaf 1 tablespoon of corn starch 2 tablespoons of water |

Ingredients to make stuffed oatmeal meat:
1. crushing oatmeal in the blender until it becomes flour. Also crushing beet until it turns it into mash to start preparing oatmeal meat.
2. In a mixture bowl the dry ingredients: oatmeal, wheat gluten, cumin, powder garlic, salt and pepper. Add the vegetable broth, beet, oil, vinegar and soy sauce and remove well until a ball of elastic dough is formed. With this amount of dough two rolls of small or one large vegetable meat come out.
3. Separate the dough into two halves and stretch each of them with a roller on a piece of transparent film. Due to the elasticity of the dough this process can take several minutes.
4. Place the landfill in the center of the dough. I have filled one of the rolls of oatmeal meat with the vegan anacardos cheese, whose recipe you can find in my recipe profile and my blog. In the image you can see the final result, then I explain how to continue with the recipe.
5. I have filled the second vegan meat roll with a sauteed mushrooms and onion that I have previously prepared cooking in a pan with hot oil the onion cut into julienne with laminated mushrooms. As before, here I show the result and in the next step I continue with the elaboration of the roll.
6. With the help of the transparent film, rolle the dough squeezing well and closing the ends by giving them a rounded shape.

8. Meanwhile, put a yuba sheet (soy skin) in warm water for 15 minutes and, apart, dissolve the corn starch in a small amount of water.
9. After the soaking time, cut the yuba leaf into two parts and, when the meat rolls are cooked and cool a little to be able to handle them, paint with a kitchen brush the Yuba with the mixture of the corn starch and water and wrap each roll of meat. The corn starch will serve as glue and the Yuba will simulate the skin of the meat.
10. Press the oven at 180 ºC. Place the vegetable meat rolls on a baking sheet lined with baking paper and bake them for half an hour.
11. Serve oatmeal meat stuffed with a baked vegetables or potatoes.
