Cuban roasted pig recipe

Ingredients to make roasted pig to the Cuban:
5 to 6 pounds of pork or pork (pig) with the fatty areas removed
1 bottle of 8 ounces of Italian dressing
1/2 teaspoon of cumin powder
1/4 cup of sweet orange juice
1/8 Fresh lemon juice cup
1/8 cup of fresh lime juice
1/2 cup of jerrez dry

Ingredients to make roasted pig to the Cuban:

2. Put it in a bowl with a non-reactive lid, or inside a plastic bag with airtight closure.

3. Mix in a large bowl the dressing, cumin, orange juice, Jerez, Lima juice and lemon. Pour on the meat.

4. Place the onion and garlic cloves on the meat and save in the refrigerator throughout the night. Remove the meat from the bag or the bowl, delight and sequence it, save the marinate.

5. Put the meat in a container to roast aluminum foil. Insert a thermometer for meats making sure that it does not touch the bone.

6. Kitchen at 350F. For 1 hour, turning the meat frequently to brown all its sides. Lower the oven temperature to 325F.

7. Bath all the meat with the marinated that kept and cover loosely with aluminum foil. Cook for 3 hours, bathing the meat frequently with roast juice until the internal temperature reaches 180 degrees.

8. Remove the foil during the last 30 minutes of baking. Let stand for 15 minutes before slice.
