Wash snails in plenty of water with a pinch of salt. Have clean snails with cold water in a pot over moderate fire. Remove the pot when the water breaks to boil. Drain the snails and wash them again, only with water. Have all the ingredients in a pot along with the clean snails to cook for approximately two hours. Remove the pot from the fire once the snails cooked. Serve the snails on a deep dish accompanied by All–oli.
