Baked veal fin recipe with sauce

We extend the fin on a table, season the inside and distribute on it, forming alternate rows, clean carrots and strips, washed spinach, clean and half cook, the hesons of very thin ham and forming a row in the center.

Ingredients to make baked veal fin with sauce:
For 4 people
1 fin of half kilo of veal.
100 g of serrano ham without bacon.
100 g of spinach. olive oil.
1 dl of white wine.
2 dl of broth.
salt.

2. We form a roll and roller the fin, tying it so that it is well prieta.

3. We heat the oven at a temperature at 180 ºC and place the fin on an oven plate.

4. Add the white wine and the broth during cooking, leaving it roasting for about 40 minutes.

5. We take it out of the oven letting it cool before cutting it so that it does not fall apart.

6. We put in a saucepan the cooking juice and remove the fat that stays on the surface.

7. We boil the juice by adding a pinch of thyme and let boil until it is reduced in half.

8. To link the sauce, add some cornmeal (cornstarch) diluted in cold broth and let the whole of a boil.

9. We serve the meat cut into slices and covered with the sauce.
