Ingredients to make baked meatballs with vegetables:
1. Before we start cooking, we let all the ingredients ready. To do this, we chop the vegetables into small paintings, cut the onion into strips and the mushrooms in sheets. On the other hand, we prepare the homemade meatballs following the recipe that we like the most. We can make them ground, chicken or even vegetarian lentils. I used meat meatballs that I prepared for another recipe and had frozen.
Trick: We preheat the oven to 180 ºC, with heat up and down.
2. If you don have time to make homemade meatballs, you can always buy them already prepared. When we have all the vegetables ready, we take a baking sheet, place the meatballs and spray them with a stream of olive oil. Then, bake the meatballs for 15-20 minutes, turning them around half cooking.
3. We remove the meatballs from the oven when they are ready and reserve them while preparing the vegetable sauce. Remember that you should turn around cooking so that they are cooking evenly.
4. To make vegetable sauce, take a pot or saucepan, heat a jet of oil and saute the onion for a few seconds to take a little color. Then, add the red and green pepper and continue to skip for approximately five minutes.
5. Add the zucchini and saute the vegetables for five more minutes. Do not worry if you consider that the peppers do not just cook, they will do it later when we incorporate the water.
6. Add the mushrooms cut into sheets and continue to skip. Add salt to taste. If you prefer, you can modify the list of ingredients and add more vegetables, such as carrot or leek. In this case, you must cook the leek with the onion and carrot with the peppers.
7. Add the two glasses of water and let it boil. When the first boil reaches, we lower the temperature, add the baked meatballs and cook over low heat for 30-40 minutes. Depending on how you want the sauce, if thicker or more liquid, you must leave more or less time. Likewise, you can always add a little more water or use vegetable broth instead.
8. Praise! When the sauce reaches the desired consistency we remove the preparation of the fire and serve the baked meatballs with hot vegetables. If any of the diners does not like to find pieces of vegetables, you can crush the sauce so that it is softer and thinner.
